- 1/4 cup (60 ml/2 fl oz) mirin
- 4 cm (1/2 inches) ginger, very finely grated
- 1 sheet nori, finely chopped or crumbled into very small pieces
- 1/3 cup (40g /1 1/3 oz) cornflour
- 1 cup (250 ml/ 8 fl oz) vegetable oil, for frying
- Pickled ginger and thin cucumber slices

Cooking Method and Steps:
The fried Nori Chicken recipe features an easy and effective method of marinating the chicken for maximum flavour, followed by a double coating of crispy nori chicken and cornflour, then frying until golden. To make fried nori chicken follow these Easy Steps.
Step 1. Chicken Cutting
Carefully trim and discard any sinew from the chicken. Cut the chicken into bite-sized pieces and discard any thin ends so that the pieces will be an even size. Place the chicken pieces in a bowl.
Step 2. Chicken Marinade
Combine the soy sauce, mirin and ginger in a small jug and pour the mixture over the chicken; toss until the pieces are evenly coated with the marinade, Set aside for 15 minutes, then drain off any excess marinade.
Step 3. Frying
Mix the nori with the cornflour and, using your fingertips, lightly coat each of chicken in the cornflour mixture.
Heat the oil in a heavy-based frying pan over medium heat. Fry 6-7 pieces at a time until golden, turning regularly. Drain on paper towels.
Serve with steamed rice, pickled ginger and sliced cucumber. Garnish with extra strips of nori, if desired.
Note: Use a very sharp knife or scissors to cut the Nori.
