Classic Cheese Quesadilla Recipe

Quesadillas are a quick, easy, and delicious meal! I fill mine with cheese and veggies, but feel free to customize this recipe with your favorite fillings

Ingredients

  • 2 large flour tortillas (8-10 inches)
  • 1 ½ cups shredded cheese (Cheddar, Monterey Jack, or a blend)
  • 1 tablespoon olive oil or butter
  • Optional: additional fillings (see suggestions below)

For optional fillings:

  • Cooked chicken, beef, or shrimp (about 1 cup)
  • Sautéed vegetables (bell peppers, onions, mushrooms)
  • Black beans or refried beans
  • Jalapeños or other peppers
  • Fresh cilantro or green onions
  • Salsa, sour cream, or guacamole for serving

Cooking Method and Steps:

Make quesadillas with this easy recipe that melts cheese, hot sauce, and avocados inside crunchy tortilla triangles for a cheesy treat

Step 1. Chicken Preparation

Drizzle chicken with 1 tbsp oil, toss to coat. Sprinkle over Spice Mix, toss well to coat.
Heat 1 tbsp oil in a large skillet over high heat. Add onion and garlic, cook for 2 minutes. Add capsicum and cook for 1 minute. Transfer to bowl, cool.
Return pan to stove, reduce to medium heat. Add remaining 1/2 tbsp oil. Add chicken and cook for 3 minutes until deep golden. Turn and cook for 3 minutes until cooked through.
Transfer chicken to cutting board, rest for 2 minutes then dice and cool. Combine with capsicum mixture.

Step 2. Fill the Tortilla

Lay it flat on a clean painting surface. Sprinkle half of the cheese over one 1/2 of the tortilla, leaving the alternative half-naked. Sprinkle the other fillings over the cheese, and then pinnacle with the final cheese. Layering the cheese like this enables the tortilla to close. Fold the bare half of the tortilla over the quesadilla fillings to create a half-moon shape.

Step 3. Cook the Quesadilla

Without using any butter or oil, preheat a dry cast-iron pan over medium-low heat. Once heated, place the quesadilla on top and cook for one to two minutes on each side, or until the tortilla is golden brown and the cheese has melted. Reduce the heat if the tortilla is browning more quickly than the cheese is melting.
Cut into wedges and present.
