- 250 g small squid tubes

- 1 x 425 g can tomatoes
- 2 tablespoons tomato paste
- 2 L fish stock 1/4 cup chopped parsley

Add mussels to a pan of simmering water and remove from heat when shells are open.
Remove mussels from shells, discarding any that do not open. Reserve four shells for garnish and discard the rest.
Step 2. Cutting Fish Fillets
Cut fish fillets into bite-sized pieces. Peel and devein prawns and slice squid tubes into rings.
Step 3. Cook Vegetables
Heat oil in a large pan. Add onion, fennel, garlic and chilli; cook until tender.
