Ingredients

  • 250 g small squid tubes

  • chopped 1 cup sliced fennel
  • 2 cloves garlic, crushed
  • 2 small red chillies, finely chopped
  • 1 x 425 g can tomatoes
  • 2 tablespoons tomato paste
  • 2 L fish stock 1/4 cup chopped parsley

Remove mussels from shells, discarding any that do not open. Reserve four shells for garnish and discard the rest.
